This is quite the strange one: the Yamato Shizuku Junmai sake. Why is this strange? According to the bottle and the Akita Seishu website, this sake has a polishing rate of 60%. Junmai sake need to have a minimum polish rate of 70%, so let's see how the 60% rate affects the sake.

Taking a sip of this sake, I noticed it's really sharp! Not in a bad way, I just wasn't expecting it. Lot's of umami flavor, and also pretty dry. Still, this sake has lot's of rice, grain and yoghurt flavors, but also a bit of floral tones. It's a shame I am not eating right now, I think this sake would go really well with a hearty meal!

This is probably not a sake you could serve to everyone, but still a solid sake!
