I first heard of Itakura Brewery when I had the private tasting with Giullia. While in Izumo I did not have the chance to visit the brewery, I did find this bottle at the train station, so let's give it a go.
The aromas coming of this sake are fruity and floral. It feels light, but the aromas are easy to smell. First thing I notice is that this sake does start out out soft and gets quite strong when you swallow it. It feels a dry, acidic, high in umami and would go well with all the seafood that the local cuisine is known for. The flavors coming of this sake are lemon, lime, pineapple, green apple. This finish is very crisp!
Overall, very solid! This would go very well with typical washoku food, a great pallette cleanser or just on a hot summer day.
