This sake was a sake that was sent to me by my online Japanese teacher a couple of years ago. Her parents, living in Yamanashi, heard from my teacher that I was studying sake, and her dad being fan of this sake brewery, sent me this bottle to try. That was a couple of years ago, so visiting this brewery in real life, I wanted to relive the experience of trying this sake.
Quite light in aromas, I can make out some floral and fruity aromas. Most water in Yamanashi prefecture is very soft, and that translates well into this sake. Starting out quite mellow, your mouth starts to fill with umami. This sake also has a lot of acidity. All that translates into a sake that will still linger some time in your mouth.
I still really like this sake, even after all these years. Yes, there are sake that are more flavorful, or more complex, but I do appreciate what was made here. I think this would go well with some good food, to elevate the flavors more.
