The first time I had heard and tried a Henpei style sake was during the private tasting I had with Jijisake. It was a real eye opener to me to hear that there are more ways of polishing rice than the regular way: polishingit into a ball. Henpei polishing is also called 'flat polishing', polishing it along the shape of the starch center.
At Otokoyama brewery I found this bottle in their shop. The aroma's of this sake are very subtle (could also be because I have a slight cold), but taking my first sip, I find this Junmai sake to be dynamic. This does have a lot of Junmai flavors: rice, cereal, etc, it still feels exciting. It is high in umami, and also a bit dry.
This is a nice experiment. I wonder what Otokoyama will do with this polishing method in the future.
