Just like the Kokki Beige, this is a Junmai Daiginjo. The difference is, is that this sake is on the other side of the spectrum. While the Beige is sweet, this is on the dryer side.
The aromas of this sake are fruity, as you'd expect of a Junmai Daiginjo. Quite dry and acidic, this sake still delivers a lot of fruity flavors. The aftertaste is short, except for the umami in this sake. The flavors that are present are primarily green apple, lemon, lime, dried fruit and blossom.
I think this sake would go very well with seafood. Solid sake, and a drink that people who sake that are more on the dry side will definitely like.
