Description

This sake is brewed by the only remaining sake brewery in Hakata with it's own 'F44' yeast and with two rice varieties: Yamada-Nishiki and local rice variety Yume-ikken. Both the yeast and Yume-ikken rice are new to me, so let's find out!

The sake itself has a slight lemony color, pouring it in my cup. The aromas are very present, and they are very fruity. This sake does have a sour note while taking my first sip, and according to the brewery itself it is because of the yeast. It's not distracting, as the sweetness balances it out. It's crisp and solid, which I personally really like in a sake. The flavor profile is fruity: green apple, pear, apricot, a bit of banana en lemon. The aftertaste does linger, and is also a bit sour.

I was very surprised by this sake. The sake I have tried in Fukuoka where mostly quite light, but the body of this sake suits my personal preferences very well. Well rounded, the sourness of the aftertaste goes on a bit too long for my taste, but still, I would get this one again.
