After the cheese and sake tasting, I just couldn’t get the topic out of my hear. So when arriving home, I decided to take a peek in my refrigerator, and try out one of my recent purchases, and decided to take the bottle that promises a ‘Shower of Flowers’. This time it will be the Kotsuzumi Junmai Ginjo Hanafubuki from Nishiyama Brewery, Hyogo prefecture.
The nose feels very light and subtle, but definitely a ginjo style sake. The mouthfeel of this sake is also quite light, slightly acidic and fruity flavors of green apple, melon, bit of banana. Surprisingly, this sake has a peppery aftertaste in the finish. It lingers for the bit before vanishing nicely. Remembering I also still had some cheese in the refridgerator, I cut up some nice and salty Parmigiano Reggiano, and see if it influences this sake. The salty cheese made the flavors in this subtle sake come out a little bit more, but not much.
Overall, a nice and subtle Ginjo. On a sunny day like this, you can’t really go wrong with it.
