Time to try my second bottle of Dan from the Sasaichi brewery, the Junmai Ginjo Yamahai Bizen Omachi. I was very curious about this one to be honest. Omachi rice is know to for it's earthy and rice flavors, and the Yamahai method adds a lot off flavor to sake as well. Since this is a Junmai Ginjo sake, I also expect some fruit flavors. All that considering, what will be the final product.
First off all, this sake has an amazing golden color. Taking a sip, I am somewhat overwhelmed by all the flavors. My mouth fills itself with some freshness, but also experiences quite an impact of bold flavors. I do notice some fruit: pear, melon. But also some more bolder flavors like pepper. This sake also has a lot of umami.
This sake is an interesting one. I would not recommend this bottle to the average sake drinker. It's quite a bold choice. Drink this one with a hearty meal I would say. A great sake for cold winter days.
